Life On The Edge
Living life to the fullest is one of the motto’s that I live by. Savoring every moment and making the best out of every situation. We all experience many emotions throughout each and everyday. I want to YOU live life on the edge. Now I’m not speaking about all kinds of radical and crazy ideas. But to live life in such a way that you are excited to wake up every morning, motivated to enjoy everything the day has to bring. Pumpkin-Choco Pancakes
So I finally did it. I made my man (Mike) pumpkin-chocolate chip pancakes and he loved them…TWICE! I am on my way to receiving the good-wife award.
Here’s the recipe. Trust me YOU will enjoy them!
Pumpkin-Choco Pancakes
- 2 cups all-purpose flour

- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger - or just add extra cinnamon and allspice
- 1/2 teaspoon salt
- 1 1/2 cups milk – I added more milk to thin out pancakes
- 1 cup pumpkin puree
- 1 egg
- 2 tablespoons vegetable oil
- 2 tablespoons vinegar
- chocolate chips
- In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Sprinkle chocolate chips on top. Brown on both sides and serve hot.



Tobi, You ARE such a good wife and it doesn’t require pancakes.:) I serve my family Bette’s pancakes (recipe from a diner in SF) almost every Sat morning. Great tradition!
